One has to admit that Hyderabadi cuisine is quite famous for its amazing non-veg recipes. And Mutton recipes are especially very popular in Hyderabad. Since the time of Mughals and Nawabs, mutton recipes used to take a lot of time to prepare. From overnight marination to hours of slow cooking, it was a long process. Dum is a process in which the mutton is cooked for hours. Today I am sharing the recipe of Hyderabadi dum ka gosht or Hyderabadi dum ka mutton. While you can see that the ingredients are pretty much the same as those used in most recipes, it's the technique that makes this dum ka gosht recipe so different from other meat recipes. This dum beef or dum gosht masala is easy to make and amazingly delicious in taste. This is the kind of mutton recipe you need when you get bored of eating the same meat dishes over and over again.
In a bowl take mutton/beef and add all the spices along with lemon juice, yogurt, ginger garlic paste, coconut powder, fried and ground onion.
Add 5 tablespoon of cooking oil and 1 tablespoon of ghee.
Combine everything well.
Add chopped fresh mint, coriander leaves and chopped green chili in the mutton and mix it as well.
Cover the bowl and let the meat marinate for 1 hour. (you may marinate overnight as well).
In a pot add mutton after marination, put the pot over high flame and cook the mutton for 4-5 minutes.
Add a glass of water (about 2 cups), give a mix, let the water cook over high flame for 1 minute.
Then turn the flame to low, cover the pot and let mutton cook for 30-35 minutes or till the mutton gets completely tender. You may use pressure cooker as well but the classic dum gosht recipe is prepared with slow cooking.
Check the mutton after every 10-15 minutes.
When the mutton is completely cooked add some more chopped fresh coriander leaves. You may keep or dry the gravy as per your choice here.
Tasty, easy and traditional Hyderabadi dum ka gosht is ready to serve.
