You can totally eat baked potato for dinner and this recipe of loaded baked potatoes in microwave is the perfect thing to heat and eat. This loaded baked potato recipe is loaded with cheese and veggies. To make these loaded bakes potatoes healthy instead of butter add sour cream along with low fat cottage cheese. So give it a try and enjoy your easy dorm friendly meal.
Wash the potatoes and scrub the skin clean.
Take a fork and pierce these potatoes from all sides.
Then place these in the microwave safe dish, cook for 5-6 minutes from one side.
Turn the sides of the potatoes and cook in the microwave for another 5-6 minutes or till they get completely tender.
When the potatoes are cooked split these with a knife.
In another bowl mix together low fat cottage cheese, cheddar cheese, red bell pepper, thinly sliced green onion, salt, paprika powder and black pepper powder. (add cooked chicken pieces or bacon strips if you want to make it non vegetarian).
Combine everything well.
Now spoon this mixture over the split potatoes and spread evenly.
Garnish with green onion and enjoy.
