No Bake Bread Rabdi Cake is a fusion recipe. Rabdi or rabri a traditional Bengali sweet and we are using it here with a twist of recent time. Bread Pudding Cake or No Bake Rabri Cake is a sweet delight that can be made when you have very little time. It is a bread-based pudding which is very popular worldwide in many countries or cuisines. This is also known as ras malai cake. Just the method is different so whenever your family is craving for cake then this no bake instant cake or no bake rabri cake recipe is there for you. This eggless bread rabdi malai cake is very easy to make with very simple ingredients and without any cake Mold, nozzles and microwave or pressure cooker. This classic sweet recipe is very tasty and you can serve this to your guest and family. It's relatively easy to make this on your kid's demand as you can make this instantly. Just boil the milk and you are ready to go. Here I am also sharing the method of how to make Rabdi at home. Do give it a try and I am sure you will love it.

  1. In a heavy bottom wide pan add milk, let it come to the boil, stir in between. 

  2. After the milk has come to the boil turn the flame to medium high and cook it while stirring it continuously. Scrap the sides as well while stirring. (you may also cook he flame over slow flame, that way you don't need to stir it continuously).

  3. After 10 minutes the milk will reduce to half, now add sugar, cardamom powder, and saffron in it in it, mix well.

  4. Add half of chopped nuts in the milk and keep the remaining aside for later use. Continue cooking the milk for another 7 minutes.

  5. After the time the milk will be reduced more, turn the flame to low now.

  6. In another bowl take milk and add corn starch/flour in it, mix well to make a slurry.

  7. Slowly add this slurry in the milk mixture while stirring continuously so that lumps may not form, cook for another 2-3 minutes. 

  8. When the milk start to make bubbles rabdi is ready, pour it in another bowl to let it come to the room temperature. 

  9. Trim the brown sides of bread.

  10. In 3/4 cup of milk add sugar and mix till the sugar dissolve completely. Keep it aside.

  11. In the base of serving dish pour some rabdi as a thin layer and spread it.

  12. Make a layer of bread slices over this rabdi layer, use bread slices according to the size of your serving dish.

  13. Pour the prepared sweet milk over these bread slices, do not oversoak the slices.

  14. Spread a layer of rabdi over these slices, again make a layer of bread slices and soak these with sweet milk.

  15. Add the final portion of rabdi over the 2 layer of soaked bread. (a bit more quantity of rabdi will be used here as this will be the top layer of cake).

  16. Spread some chopped nuts over the top.

  17. Put the dish in the fridge for about 60 minutes. When the top surface of cake is a bit dry it is ready to serve.

  18. No bake bread rabdi cake is ready to enjoy.

  19. _____________ Tips: If you will add 2 tablespoon of water in the pan before adding milk in it, the milk will not stick to the bottom.

  20. We will divide the rabdi in 3 portions, 2 portions will be equal and the 3 portion will be a bit more in quantity as it will be the top layer of cake.
