Today's recipe is a perfect recipe for picnic, or for diet conscious people. The recipe is of a good classic pasta salad with a vinaigrette & lemon dressing. Making this quick and easy pasta salad is actually as easy as boiling pasta and tossing in a few key ingredients. I made a little bit change in this salad. Usually vegetables are raw, uncooked for salad but in this salad I fried some vegetables for a better taste. The dressing is made with easily available ingredients in you kitchen and will enhance the taste of the salad to an easy Italian pasta salad. The calories count of this salad is very low and it can be taken as a side or proper meal as well. The best thing is you may add or skip anything you want in this salad. Try and enjoy.



  1. In a pot add water and let it boil.

  2. Then add salt and pasta. Let the pasta boil till it is completely done.

  3. Strain the pasta and wash with cold water so that all the starch from pasta should drain.

  4. Add cooking oil in pasta, give a mix and keep it aside.

  5. Now prepare the vegetables that we are not going to use raw in the salad.

  6. In a frying pan add cooking oil along with mushrooms and capsicum. Roast on high flame for 1-2 minutes.

  7. Cover the pan, cook for 3-4 minutes, uncover the pot and vegetables are ready.

  8. Take these out and cool down completely.

  9. ________________ For Salad Dressing ________________

  10. In a mixing bowl add cooking oil, lemon juice and vinegar,

  11. Beat all these ingredients well till the mixture turn into creamy texture/color.

  12. Now add salt, oregano, black salt, black pepper powder in this wet mixture and combine well.

  13. Add mayonnaise in this mixture, beat it well to combine, salad dressing is ready keep it aside.

  14. Now assemble the pasta.

  15. In a big mixing bowl add boiled pasta along with cooked vegetables, chopped carrots, cucumber, boil corns, chopped cabbage, chopped tomato.

  16. Pour the prepared salad dressing over these vegetables and give a good mix to everything.

  17. Add chopped black olives in the dressing and sprinkle chopped fresh coriander leaves. Give a mix.

  18. 30 minutes healthy pasta salad is ready to enjoy.
