Banoffee pie is a classic English dessert used to be made with banana and toffee. Word banoffee is a combination of two words banana and toffee. Despite its divine taste the pie is so easy to prepare. It is extremely delicious with a base of biscuit crust, a filling of banana and topping of toffee or caramel. A generous help is provided in taste with whipping r heavy cream. If you have never tried banoffee pie before you are seriously missing a delicious treat.
You could use base of graham crackers, digestive biscuits, vanilla wafers or any other cookie of your choice. Due to its popularity you may see hundred of different variant of recipes on internet of banoffee pie. It is an easy no bake without eggs made dessert that you can prepare on any special occasion like eid. For making banoffee pie we require toffee sauce that you can prepare by preparing caramel sauce. I used the easy method and made this toffee sauce by cooking the condensed milk. I have already shared the recipe of homemade condensed milk on my website.
For preparing caramel sauce with condensed milk, put the can of condensed milk in the pressure cooker.
Fill the pressure cooker with enough water to cover the can.
Cover the lid of pressure cooker and put it on high flame for 10 minutes on high flame.
Then turn the flame to low and cook for another 20 minutes.
After 20 minutes turn off the flame and let the pressure of cooker release on its own. Then open the lid of cooker, take the tin of condensed milk out and let it cool down completely.
Open the tin and take out the toffee sauce in a bowl.
Add fresh cream or malai in it and mix well with electric or hand mixer. You can even give it a blend in your juicer blender.
Toffee sauce or caramel sauce is ready put it aside.
Grind the biscuits into a fine powder, put it in a bowl and add melted butter in it. Mix well.
Spread in the serving dish and press well with the back of spoon or glass to make a base layer for the dessert.
Put the serving dish in the fridge for 10 minutes so that the base layer of biscuits could be set completely.
In another bowl take chilled whipping cream and beat well till the stiff peaks form. (if you are using sugar free cream add powdered sugar in it as per your taste).
Mash 1 banana with the help of fork, add this mashed banana in the whipped cream and mix well.
Also add 2 tablespoon of prepared toffee sauce in the whipped cream and mix it as well. Cream for banoffee pie is ready.
Take out the dish with base of biscuits from fridge. Add a layer of toffee sauce over the biscuit layer and spread it evenly.
Cut the remaining banana in slices and spread over the toffee sauce layer.
Put the whipping cream in a piping bag and spread a layer of it over the banana layer.
