Chicken potato toast for kids is an open face sandwich recipe where potato and chicken mixture topped on bread slices and then fried to form a crispy delight. In a bowl add boiled potatoes and mash with a potato masher.
Now add diced capsicum, shredded chicken, chopped spring onion along with salt and crushed black pepper.
Add all purpose flour and egg as well. Mix till everything is well combined. Keep it aside.
Cut the brown sides of bread, add about 2 tablespoon of chicken potato mixture over the bread slice, spread evenly.
Cut the bread in 4 squares.
Heat cooking oil in a pan over medium flame.
Put the cut squares of bread in this heated oil in a way that chicken potato mixture side should be faced down to the pan.
Flip to the other side after it turns golden brown. Cook the other side till golden brown.
Serve this kids friendly chicken potato toast with ketchup or dip of their choice.
