Tongue tickling spices and gooey cheese this kids special potato cheese sandwich captures the best of both worlds. This potato sandwich or aalo cheese sandwich holds potato slices and cheese spiced up with chaat masala and green chutney. Made with simple mashed potato and cheese stuffing this is a simple street style potato sandwich recipe. as it is very much inspired by Indian street style sandwiches. Sandwiches are not native food of India but has taken oven since it is introduced. The recipe of this cheese sandwich is very simple known for its creamy and filling stuffing of potato and cheese. For preparing a kids lunch box you need something in a jiffy and as per the taste of your picky eaters too. For this potato cheese sandwich you do not need to pan fry the stuffing and also no need to slice the vegetables. The potato has to be boiled and mashed with spices added directly to the mashed potatoes. The cheese is also directly added to the mashed potatoes which is then directly used as sandwich stuffing.

  1. In a large mixing bowl add boiled and grated potatoes along with ginger paste and finely chopped green chilli.

  2. Then add cumin powder, chilli powder, garam masala powder, amchur and salt. Also add chopped coriander and mozzarella cheese in the potatoes.

  3. Mix well making sure everything is well combined.

  4. Take a bread slice and trim off the sides of it.

  5. Spread some butter on 2 slices of bread.

  6. Spread green chutney or ketchup on it. (If you think green chutney will be too spicy for kids skip it).

  7. Now add about 2 tablespoon of potato cheese stuffing over the bread slices and spread evenly.

  8. Cover with another slice of bread.

  9. Grill in sandwich maker till the cheese melts and the sandwich turns golden brown.

  10. Potato cheese sandwich for lunch box is ready.

  11. _________ Note: If you do not have the sandwich maker or grill for toasting the sandwich, use tawa of frying pan instead. Grease it with butter or ghee before toasting the sandwich so the bread may not stick to it.

  12. If you want to give a twist to this basic recipe, add some vegetables of your choice in the cheese sandwich like onion, tomatoes, cucumber or lettuce leaf.

  13. If you do not want a string consistency in your sandwich use cheddar cheese instead of mozzarella.
