When feeling stressed or overwhelmed cooking can be a fun activity. While food shouldn't be your coping mechanism every time something goes wrong, it's perfectly fine to whip up some delicious (and sometimes not so healthy) food when you're desperate. However, this can be difficult at times in college. Finding time to eat healthy meals can be difficult for any college student. Microwave desserts, meals and snacks are perfect recipes for when you're in a time rush or don't have access to an oven. Microwave is one of the most underutilized pieces of kitchen equipment, which is a shame, because it's such an efficient way to cook in a dorm room. Even if you're not sick of cafeteria food (yet), but you're looking for healthy recipes, or just love to cook, the recipes I've shared on my website are great for dorm rooms. Do check other microwave cooking recipes here.
Chocolate cake is the most amazing dish of all time. This warm and decadent treat is sure to lift spirits and transport you to a magically cozy place. However, it is difficult to develop in a short time. There's science involved in whipping up the perfect chocolate cake quickly (but don't worry—that kind of science is delicious and won't lower your GPA). This recipe of dorm room mini chocolate cake is easy and quick to prepare, requires simple and easily available ingredients and tastes amazing. We are not using any cake premix here and preparing it from scratch. It is also the eggless microwave chocolate cake recipe. For me microwave chocolate cake is one of the most amazing thing invented by human being.
In the luke warm milk add vinegar. give a gentle stir and keep aside so that it could become butter milk.
In a big bowl pour cooking oil and powdered sugar, mix well.
Add salt, coffee powder, baking soda, butter milk and whisk well.
Place a strainer over the bowl and strain all purpose flour, cocoa powder and salt through it.
Using cut and fold method fold the dry ingredients into the wet ingredients.
Thin out the batter by adding 1/4 cup of water. (Thinning out a thick batter in the end ensures a smooth lump free batter compared to adding the liquid from the start).
Line a microwave safe dish with parchment paper and pour the batter in it. Even out the surface of the batter as much as possible.
Bake in the microwave for 4-5 minutes or till the toothpick inserted in the center comes out clean. Depending on the power of microwave the timing may vary so do check the cake after 4 minutes.
Take the cake out of microwave and let it cool down completely.
For chocolate glaze heat the chocolate pieces or chips in the microwave for 30 seconds or till they start to melt.
Pour the melted butter in the chocolate and combine to make a smooth glaze. You may adjust the consistency of glaze depending on the quantity of butter added.
Pour the glaze over the cake and cut in your desired shape to serve.
Easy dorm friendly chocolate cake is ready to enjoy.
