The combination of fresh veggies with hummus wrapped in tortilla is just brilliant. These no cook veggie hummus wraps are also economical as they are made with just few simple ingredients. I suggest using a large often called "burrito size" tortilla. Also these no cook hummus wraps are customizable and you can use veggies of your choice.
Thinly slice the cucumber and the jarred fire roasted red pepper.
Place the avocado cut side down and peel the skin off. Then cut into thin slices.
To prepare the wrap heat the tortilla in microwave. This is not necessary but can make rolling the tortilla easier.
Once the tortilla is ready spread about 3 tablespoon of hummus on it.
Place avocado slices, roasted red pepper slices and cucumber slices on it.
Season with salt and pepper and lightly drizzle extra virgin olive oil on it.
Fold in half or wrap burrito style.
