Beef stew is a classic comfort food, made primarily from beef, potatoes, onions, carrots and vegetables. Beef stew involves very simple, healthy, pantry ingredients. Traditionally, beef stews are made with low and slower cooking. Instant pot is just a fancy pressure cooker and its perfect for me especially in those school nights when we are busy and just don't have a lot of time to be in the kitchen. Using an instant pot for a beef stew can take just over an hour, from pulling the ingredients from the refrigerator to sitting at the dinner table. The recipe that I'm sharing today is a dorm room beef stew, great for all who cooks in small spaces without stove. The instant pot developed a new approach to cooking and this is a begginer instant pot beef stew recipe.
Press the saute button on instant pot, it will notify when its hot.
Mean while add salt, pepper, garlic powder, onion powder and cumin in the beef cubes, mix the seasoning well with the beef.
Coat the beef with flour as well.
When the "hot" sign came on the instant pot add cooking oil in it.
Then add bee cubes and make it brown, we do not need to cook the beef at this stage.
Remove the beef from pot and keep aside.
You will notice a brown layer in the bottom of the pot this will give extra flavor to the stew. Add a little more cooking oil in the pot and add onion cubes in it.
When the onions get saute add celery, carrots, brown beef, halved potatoes along with beef broth.
Give a stir to everything, cover the pot, put the pressure lock to seal, cancel the saute mod, hit manual button and then with the plus sign on instant pot adjust the timer to 13-15 minutes.
After the timer is gone off you can wait for naturally pressure release or do the quick release if you want to.
Open the lid of instant pot, give a stir to the stew.
Take some of the liquid from stew, pour it in the corn flour and whisk to make a lump free slurry.
Add this corn flour mixture in the beef stew, stir it and the sauce will thicken up nicely.
