Malai cake is a soft spongy cake which is soaked in sweet thick milk. It is a western style cake soaked in Pakistani style rabri or malai milk. The cake is an inspiration from ras malai that is a traditional sweet of subcontinent so you can even call it ras malai cake. The recip of this super soft malai cake without oven is the easiest cake recipes that even not required any frosting or decoration instead it is soaked with flavored milk.   2. In a pan add eggs and sugar and beat these for 2-3 minutes with electric beater. If you are using hand whisk beat the mixture till it becomes foamy and pale in color.

  3. Then add baking powder, vanilla essence and cooking oil in it. Beat again for 1-2 minutes.

  4. Add all purpose flour in this mixture and combine well. Do not over mix the batter.

  5. Grease a baking tray and pour the batter in it.

  6. Pre heat a big pot (pateela) on medium flame with a wire stand in it for 10 minutes.

  7. Then put the baking dish in this pot, cover it and let the cake bake on medium low flame for 30-35 minutes or a skewer comes out clean.

  8. Take the cake pan out and let the cake cool down completely.

  10. In a pan add milk and let it come to the boil.

  11. Then add condensed milk and cardamom powder in it.

  12. Let the milk cook on medium flame till it reduced to half.

  13. Add fresh cream in it and mix well.

  14. Our malai for cake is ready, turn off the stove and let the mixture cool down.

  15. Poke the holes in cake with the help of skewer or fork.

  16. Slowly pour the milk mixture over it so it get well soaked with it.

  17. Garnish with some chopped nuts.

  18. Put it in the fridge to chill completely.
