Paratha is a flat bread fried in a pan or tawa using butter, ghee or cooking oil. The dough of paratha while rolling, rolled out many times to give it a flaky and layered texture. Paratha is a native recipe of India Pakistan subcontinent.

Today's recipe is of soft, healthy and delicious mixed vegetable paratha with mixed vegetables and spices. Adding cooked mix veggies in the paratha while rolling it makes it super soft and they will remain soft even after they cool. The goodness of spice cooked mixed veggies as stuffing makes this paratha makes it fabulous tasty. The best part of the mix vegetable paratha is that it is made with everyday ingredients and you can make it any time you want. I am just sharing a method for mixed vegetable stuffed paratha, you do not need to cook it with the same veggies that I use. Just through in what so ever veggies you have in your fridge and enjoy this delicious paratha. As Ramazan is continuing these days you may also make and enjoy this vegetable stuffed paratha during sahri time. Try this healthy easy breakfast mixed veg paratha at home.

  1. In a bowl add flour, salt and ghee and give a mix to everything till the flour crumbled.

  2. Gradually add water and make the dough, grease the dough with oil, cover it and let it rest for 20 minutes.

  3. Now in a pan add cooking oil and put it on low flame.

  4. Add corainder, cumin seeds, red chili powder, turmeric powder, chaat masala, red chili flakes and mix everything well for 30 seconds.

  5. Add ginger garlic paste and cook for few seconds until the raw smell is gone.

  6. Now add chopped onion, carrots, cauliflower, green chilies in it and cook the vegetables for 30-40 seconds.

  7. Add boiled potatoes and chopped fresh coriander in these vegetables, give a mix to everything.

  8. Mash the vegetables well with a potato masher or spoon.

  9. Add salt in the end, give a mix and vegetable stuffing for paratha is ready.Let it cool down completely.

  10. For making paratha make the balls from dough, dust some flour on the work surface and roll the paratha.

  11. Add about 2 tablespoon of the cooked vegetable filling in the middle of rolled paratha.

  12. Take the edges and start pleating bringing to the center.

  13. Join the pleats together and secure tight pinching off excess dough. Do this with all dough balls.

  14. Sprinkle some flour on the surface and again roll a slightly thick paratha.

  15. Heat a tawa or griddle, place the rolled paratha on it, brush some ghee or oil and fry from both sides.

  16. Healthy mix vegetable stuffed paratha is ready, serve with raita, chatni or pickle.

  17. _______ Note: You can also add the vegetables in the flour before kneading the dough.
