How about a twist to our good old biryani and pulao? The recipe that I am sharing today is an easy to cook, delicious and spicy chicken vegetable rice, perfect for any day of the week. While the spices add up to the flavor the veggies make it healthy. The ingredients used in this recipe are very basic and available in every pentary. You may even use leftover rice for this recipe.
Ingredients
- ______________ For Boiling Rice _______________
- Rice (chawal) 500 grams ( i used basmati rice)
- Salt (namak) 2 tablespoon
- Cooking oil 1/2 teaspoon
- ____________ For Chicken Marination _____________
- Boneless chicken (bina hadi ka murghi ka gosht) 500 grams
- Ginger garlic paste (pisa hoa adrak lehsan) 1 teaspoon
- Salt (namak) 1/2 teaspoon
- Red chili powder (pisi hoi lal mirchain) 1 teaspoon
- Coriander powder (pisa hoa zeera) 1 teaspoon
- Corn flour 2 tablespoon
- Vinegar (sirka) 1 tablespoon
- ______________ For Rice Cooking ______________
- Desi ghee 200 grams (you may also use cooking oil)
- Peas (Matar) 1 cup
- Julian cut carrots (bareek kati gajrain) 100 grams
- Ginger garlic paste (pisa hoa adrak lehsan) 1 teaspoon
- Whole dry red chilies (sabut lal mirchain) 7-8
- Water 1 glass
- Cumin powder (pisa hoa zeera) 1 tablespoon full
- Red chili powder (pisi hoi lal mirchain) 1 teaspoon
- Black pepper powder (pisi hoi kali mirchain) 1 teaspoon
- Chicken powder 1.5 tablespoon (or use 2 chicken cube)
- Garam masala powder 1 teaspoon
- Sugar (cheeni) 1 teaspoon
- Soy sauce 2 tablespoon
- Oregano 1/2 teaspoon
- Salt (namak) add if required
- Desi ghee or butter as required for layering
- Green onion (hara piyaz) 150 grams
Directions
_____________ For Marination of Chicken ____________
In a mixing bowl add chicken, ginger garlic paste, salt, red chili powder, cumin powder, corn flour, vinegar and mix everything well.
Cover the bowl and keep the chicken to be marinated for 30 minutes.
________________ For Boiling Rice ________________
Wash and soak the rice for 30 minutes.
In a pot add enough water for boiling water, add salt and cooking oil in it. Let the water come to boil.
Add soaked rice in the water and boil on high flame until completely done. Strain the rice and keep aside.
______________ For Rice Cooking _______________
In a pan add desi ghee and let it heat on medium flame.
Add the marinated chicken and fry it for few minutes till the chicken changes its color.
Now add whole red chilies, peas, carrots in the chicken and give a mix to everything.
Add ginger garlic paste in it and mix it as well.
Add cumin powder, red chili powder, black pepper powder, chicken powder, grama masala powder, sugar, soy sauce and oregano in the chicken mixture. Add salt if required.
Then add glass of water.
Cook the chicken and masala till the peas are completely cooked.
When the oil separates from masala add green onion in it, mix well.
Add a layer of boiled rice over the cooked chicken, spread some desi ghee or butter on top along with green part of some green onion. Cover the pot and steam cook the rice for 5-10 minutes.
Spicy chicken and vegetable rice are ready to enjoy.
