If you are bored with eating dal, rice or routine sabzi (vegetables) then you must try this arvi kay patton ka salan. Arvi kay pattay or arbi kay pattay also known as colocasia leaves is a traditional Gujrati dish made with big leaves of arvi.
The recipe is made with a base of gram flour batter applied on arvi patta, rolled, steam cooked, then cut in slices and again finely cooked in onion and tomato gravy.
Arbi kay pattay or taro root is a vegetarian dish served as a side dish or as a light main course. The dish has a very unique taste and you will be amazed with it. The process of making arvi kay patton ka salan is a bit long as it involves various steps but the recipe is a traditional that people of Gujrat used to make. A lot of variations came in the recipe of arvi ke patty like some people used to fry the leaves after coating and rolling them with gram flour but the traditional recipe involves steaming of leaves not frying. I have tried to share a step by step ad easy method of preparing this arvi kay patton ka salan, hope you can try it easily as well.

  1. Wash and clean the arvi leafs thoroughly.

  2. Trim the thick and big stems from leaves as they will remain uncooked while steaming and will taste bitter.

  3. Prepare the besa (gram flour) batter for applying on the leaves.

  4. In a mixing bowl add gram flour, coriander powder, cumin powder, red chili powder, turmeric and salt.

  5. Gradually add water and make a thick paste.

  6. Apply this paste on the inner side of arvi patta, roll the leaf then again apply the batter on rolled side, completely roll the leaf in this way. (check the video of recipe for detail instructions).

  7. Do the same process with all arvi ka pattay and keep aside.

  8. Heat enough water in a pan that could produce steam.

  9. Put a strainer on top of pot and then put the rolled arvi leafs on this strainer.

  10. Cover the leafs and let these steam cook from one side for 10-15 minutes. (if you are using small leaves then 5 minutes steaming will be enough).

  11. Flip the side and cook from other side for the same amount of time as well.

  12. Take away from the steamer and let the arvi patta cool down completely, then cut in pieces according to the thickness of your choice.

  13. ______________ For Gravy _______________

  14. In a wok add cooking oil and let it heat on medium flame.

  15. Add finely chopped onions and cook til they turn light golden in color.

  16. Add ginger garlic paste and cook for 2 minutes.

  17. Now add tomato puree in it.

  18. Add spices at this stage, cumin powder, salt, red chili powder, turmeric, coriander powder and cook all these spices with tomato puree. Do not add more water for spices at this stage. Cook for 3-4 minutes.

  19. Add finely chopped green chilies and mix well.

  20. Lower the flame and add yogurt in this masala, combine and let the masala cook for 3-4 minutes more.

  21. Add the cooked and cut arvi kay pattay in this masala, combine and cook for 3-4 minutes.

  22. Add water and cover the pan. Cook on low to medium flame for another 7-8 minutes.

  23. Lastly add garam masala powder in this gravy, combine and turn off the flame.

  24. Arvi kay patton ka salan is ready to enjoy.
