Korma is a spicy, rich and comforting curry that you can enjoy whether on any occasion or casually at home. Korma or qorma is originated in subcontinent of India. Korma is a mild curry made from variety of spices along with yogurt. Usually korma is enjoyed on wedding occasions in Punjab Pakistan and the taste of that shadion wala degi korma is really amazing. Mostly chicken is used here for making korma but today I am sharing beef korma recipe that you may even call beef degi korma recipe due to its especial degi taste. I made this beef korma without pressure cooker for the ease of everyone. Do give it a try and enjoy the appreciation of your family.
In a pot add cooking oil or ghee and heat it on medium flame.
Add sliced onion in it and fry till they turn golden brown. Take out and keep aside.
In the same oil add beef and fry for 3-4 minutes.
Add ginger garlic paste and fry for 3-4 minutes more.
Then add kashmiri red chilies powder, coriander powder, black pepper corns, bay leaf, cloves, green cardamom, black cardamom, cinnamon stick, star anise, cumin, red chili powder, salt in the beef.
Give a mix to everything and add water in the beef. Fry the masala for 2-3 minutes and cover the pot. Let the beef cook on low flame for 40-50 minutes or till it gets tender completely. ( you may add more water if required).
After the beef is fully tender add whisked yogurt in it.
Crush the brown onion with hands and add these as well in the beef.
Give a mix to everything, turn the flame to medium and fry the korma for 10 minutes.
Add mace and nutmeg powder along with kewra essence, mix everything and perfect degi style 1 kg beef korma is ready to enjoy.
___________ Note: You may make the gravy in korma as much you required.
For speeding up the cooking process you may even use pressure cooker. Adjust the quantity of water accordance with your pressure cooker.
My korma become darker in shade as i used clay pot and its sides burnt but the taste of the korma was really amazing.
