Besan ki barfi is basically a gram flour fudge made with gram flour, clarified butter (ghee) and sugar syrup. It is one of those sweets that can be made at any occasion and loved by everyone. I have already shared besan burfi recipe on my website and this is another version of this classic sweet. Method of making halwai style besan barfi is very easy if you follow all the steps correctly. Do give it a try this winter and enjoy.
In a wok add ghee and put the wok on medium to low flame.
Add besan (gram flour) and roast it in the ghee for 20-25 minutes. The besan will turn aromatic and will change its color.
Take it away from the flame and cool it down a bit so that it may not burn from the bottom.
You may add cardamom powder in the besan at this stage.
Now prepare the sugar syrup. In a pan add water and sugar. Let the sugar melt completely.
Cook the syrup till one string consistency forms.
Take it out of the pan and add in the roasted warm besan. Combine syrup and besan well.
Add a butter paper in the bottom of a pan in which you will set the barfi.
Pour the barfi mixture in the pan, spread it evenly and smooth the surface with the back of a spoon.
Spread some chopped nuts over the top for garnishing.
Let the barfi set at room temperature for 4-6 hours. During the setting time mark the barfi with a knife for later easy cutting.
When the barfi sets completely cut on marked lines and serve.
________ Tips: After adding sugar syrup if you feel that barfi is not setting and the mixture is too runny cook the mixture for few minutes.
If you feel that barfi is too hard and it started to set even before completely mixing the syrup add a little water in the mixture.
