With a great combination of juicy chicken pieces and delicious mashed potatoes, chicken sandwich or chicken potato open toast recipe is the perfect meal for your kids. You can toast the sandwich in a grill sandwich maker instead of frying it. This chicken and potato sandwich recipe is a very easy and delicious snack to satisfy your evening hunger and is also a great breakfast option to start your day. It is packed with good quality protein and carbohydrates making this chicken an potato sandwich a healthy option for those adults who are trying to lose some weight. All you have to do is skip the butter while toasting and your healthy meal is ready.

  1. In a pot add chicken, potato, salt, black pepper powder, ginger garlic paste and water. Give a stir, and let these boil till chicken and potato get completely tender. This will take about 10-15 minutes over low to medium flame.

  2. When chicken and potato are cooked take out, peel and mash the potato, shred the chicken as well. (If any stock remained after boiling dry it on high flame).  

  3. Add chicken and mashed potato in a bowl, and add finely chopped capsicum, chopped fresh coriander, chili flakes, black pepper powder, salt, roasted and crushed cumin, butter, fresh cream. Give a good mix to everything using your hands. 

  4. Take a slice of bread and spread the mixture evenly over it. 

  5. Cut the slice in triangle or in your desired shape. 

  6. Prepare the coating for sandwich by adding salt, black pepper powder, chopped fresh coriander in the egg. Whisk the egg well. 

  7. In a frying pan add butter or cooking oil and let it heat over medium low flame.

  8. Dip the chicken potato mixture side of sandwich in the egg mixture and place this side in the heated pan, cook till golden color.  

  9. Toast the other side of sandwich as well till crispy.

  10. Tasty and easy chicken and potato sandwich for kids is ready. 

  11. _______________ Note: Dip in the egg mixture and half cook the sandwich, then freeze these for later use.

  12. You may also dip the sandwich in egg mixture then coat with bread crumbs and freeze these as it is. When required take out and cook in the same process without defrosting it. 

  13. You may add shredded cheese in your chicken mixture for extra flavors.

  14. Spread ketchup or chutney over the slices before spreading chicken mixture
