The best part about noodles is they hardly require any time to cook and you don't need any particular skill to cook the noodles. Here I am sharing a quick and healthy recipe of Chinese egg noodles for kids loaded with veggies. This easy recipe of Chinese style egg noodles for kids is great for a quick lunch or after school meal. You may give this recipe twist of your own by adding chicken or different type of veggies. An easy to prepare recipe for kids lunch box. Also I have used egg noodles for this recipe but you may use the simple noodles (pasta) or hakka noodles or whatever your choice is.
Boil the noodles as per pack's instruction and keep aside.
In a wok add cooking oil and heat it on medium flame.
Add beaten eggs and cook for 2-3 minutes.
Now turn the flame to high, add cabbage, carrots, capsicum, white part of green onion and stir fry the vegetables for 2-3 minutes.
Add salt, black pepper powder, red chilli powder, chicken cube, soy sauce, vinegar and mix well.
Add boiled egg noodles and give everything a good mix.
Sprinkle the green onion leaves (green part and turn off the flame.
Kids special egg noodles are ready to serve.
