This is self evident for every mom that kids love finger food, dipping and nuggets. The recipe that I am going to share here is a veggie nuggets for kids recipe that is an easy and fun way to get more vegetables into your child diet. These vegetable nuggets are perfect for lunch or snack. These vegetable nuggets are unique and flavored without meat. The recipe is a combination of multiple vegetables but the beauty is that these vegetables does not over power each other. All the flavors, taste and richness of each vegetable is preserved while shaping and frying. I am a forever fan of using veggies in all the ways from super simple to incorporating them in more complex recipes as a way to regularly expose the kids to lot of options. 

These kids special vegetable nuggets have the same texture like chicken nuggets plus they are easy food for toddlers to eat especially when dunked into ketchup, ranch or any other dipping sauce. Also these vegetable nuggets are quirkiest and easiest snack option to munch on for a classic brunch with your friends or for a movie night. You may even freeze these healthy veggie nuggets after cooking these completely, store in any airtight container or zip lock bag and reheat in microwave whenever required.

  1. Mash potatoes, peas and carrots together.

  2. Then add red chili powder, shredded cheese, cumin powder, chopped fresh coriander leaves, garam masala powder and salt in the mashed veggies, combine everything well.

  3. Add 3 tablespoon of bread crumbs in this vegetable mixture, add more if you feel that mixture is too runny and will not hold its shape.

  4. Take small portion of mixture and try shaping it into a nugget. 

  5. Make a slurry by combining corn flour with water. 

  6. Dip the nugget in this corn flour slurry and then coat with remaining bread crumbs. Keep it aside. Do the same process with complete veggie nuggets mixture.

  7. Heat the cooking oil in a frying pan over medium heat, add nuggets into it. Shallow fry the nuggets until they turn golden brown rom all sides. 

  8. Once done transfer them over absorbent paper to absorb excess oil. 

  9. Your healthy veggie nuggets for kids are ready, serve with ketchup or your favorite dip.
