Vegetable sandwiches are loved by so many as they have a lot of colors, textures and flavors in every bite that its just beyond satisfying. The creamy vegetable sandwich recipe that I am sharing here, I find it filling a complete meal on its own but you can pair it with your favorite soup or salad. Serve this to kids in fun way by making finger sandwiches in their lunch box or even if they are at home. with some fruits or chips or crackers of their choice. This vegetable sandwich is an excellent, quick and easy back to school recipe that also be an amazing dinner option for your kids. This creamy vegetable sandwich is loaded with veggies, creamy and cheesy, very customizable, super delicious and a complete fuss free meal.

  1. ___________ For Creamy Vegetable Filling ___________

  2. In a pan add butter and melt it.

  3. Add chopped onion and garlic, saute until the onion are translucent and soft.

  4. Add italian seasoning, salt, red chili flakes, and black pepper powder. Saute well.

  5. Then add carrots, peas, sweet corn and chopped cilantro, give a good mix to the veggies and cook for 1-2 minutes.

  6. Take the pan off the heat and let this vegetable mixture cool down slightly.

  7. In a mixing bowl add softened cream cheese, tomato ketchup, shredded mozzarella and vegetable filling. Mix everything until well combined.

  8. Divide this vegetable mixture into 4 equal portions and keep aside.

  10. Apply butter to one side of both bread slices of a sandwich.

  11. Place one portion of filling on one bread slice and spread it evenly.

  12. Cover it with the second bread slice, spread some butter on top of the slice as well.

  13. Heat a grill pan or griddle on medium flame and place the sandwich in it with the butter side down.

  14. Cook for 2 minutes or till the sandwich turns crispy and golden.

  15. Apply the butter to the other side of sandwich, flip it and cook this side as will till it turns golden brown.

  16. When both sides of sandwich are crispy and golden remove it from the pan on a cooling/wire rack. This will prevent sandwich from getting soggy.

  17. Delicious and filling creamy vegetable cheese sandwich is ready. Cut it in half or in finger shape for kids, serve warm.

  18. _______Note: You may prepare the vegetable filling a day or two ahead in advance and store it in the refrigerator.

  19. Depending on type you are using fresh and frozen veggies both takes different time of cooking, so do it accordingly.

  20. This sandwich can be served without grilling if you do not like it crispy.

  21. Yo may add some greens to your sandwich to make it extra healthy.
