A good chocolate cake recipe is very difficult to come by. There are always high hopes and promises about what you are looking for, but the delivery can be the opposite and sometimes less than what you want. Here I am sharing the recipe of Chocolate Fudge Cake and it is one of those cakes where you are not sure which is better – the cake or the frosting. This moist chocolate fudge cake requires no butter, no fancy kitchen tools and ingredients. The frosting and the ganache is chocolaty and melts in mouth. This triple layer chocolate fudge cake is a party pleaser recipe and you will fall in love with it.

  1. Grease and 8 inch baking pan and line it with butter paper. Set it aside.

  2. Sift all purpose flour, cocoa powder, baking soda, baking powder and salt together in a mixing bowl, combine well and set these dry ingredients aside.

  3. In another bowl add eggs, milk, cooking oil, caster sugar and beat on low speed till all the wet ingredients are well combined. 

  4. Now add sifted dry ingredients and beat on low speed till well combined. Then fold with the help of a spatula to make sure all dry ingredients are mixed. 

  5. Pour the batter in prepared baking pan, bake it in pre heated oven at 180 ℃ for 40 40 minutes. (Or bake in a preheated hot with a wire stand in it over low to medium flame for 40-45 minutes or till a tooth pick inserted comes out clean). 

  6. Take out the pan, cover it with a kitchen towel to keep it moist.

  7. _______________ For Chocolate Ganache and Frosting _______________

  8. In a sauce pan add whipping cream, milk and put it on low flame till it start to simmer. After 6-8 minutes when it is hot enough take it way from the heat.

  9. Add chopped chocolate and mix till chocolate completely melts.

  10. Add butter and combine it as well. Transfer to a bowl and let it cool completely while stirring at room temperature.

  11. Reserve 1 & 1/2 cup of ganache for later use.

  12. Cover remaining ganache and put the bowl in the refrigerator till its completely chilled.

  13. Take out and beat well for 3-4 minutes, add icing sugar and beat till soft peaks forms, transfer to a piping bag and keep aside.

  14. Slice the cake in 3 equal layers and place the base layer on cake stand.

  15. Add the prepared frosting and chocolate chips over it, then place another layer and repeat the same process till the top layer of cake. Cover the sides of the cake with chocolate frosting and place the cake in the refrigerator for 1 hour to let it set.

  16. Take out the cake and pour the reserved chocolate ganache (warm) on the top of the cake, apply grated chocolate on the sides of the cake and refrigerate for 30 minutes. 

  17. Decorate the top of cake as per your choice, triple layer chocolate fudge cake is ready to serve.
