If you are a coffee fan like me, then this cake is right up your way. Soft, moist and light sponge, flavored with coffee & walnuts along with coffee milk and topped with mocha frosting. This coffee walnut cake requires no extra efforts and no technicalities to make as this is a basic sponge cake. The mocha frosting is also very easy to whip up. You can prepare this coffee walnut cake ahead of time and keep it in fridge so that next day you could easily flavor it with milk and mocha frosting. I used oven for baking but you can easily make this coffee walnut cake with mocha frosting without oven. I have mentioned all the details below in directions, detailed step by step recipe for preparing coffee walnut cake with mocha frosting with oven and without oven. Try and enjoy!

  1. _____________ For Cake _______________

  2. In a mixing bowl take butter and beat it to smooth it a bit. The butter should be on room temperature.

  3. Add sugar and vanilla essence in the butter and beat till the batter becomes fluffy and creamy.

  4. Add 2 eggs and beat these with the butter mixture. If you feel the mixture is crumbly or lumpy don't worry as it will be set after all the steps.

  5. Take instant coffee in a mixing bowl, add water and dissolve the coffee in it.

  6. Add this coffee in the butter mixture and combine it.

  7. Put a strainer on the bowl and sift in all purpose flour and baking powder in the butter mixture. Also add a pinch of salt in it.

  8. Add some milk as the batter will be a bit stiff at this stage. I heated the milk a bit as it was chill and I cannot use it as it is.

  9. Add chopped walnuts and mini chocolate chips, mix everything till the batter becomes smooth. You can skip these 2 ingredients if you do not want.

  10. Take a baking dish and add batter in it. You can use any shape or kind of dish as per your choice. I took 9x5 inches baking dish.

  11. Pre heat the oven at 180 °C and bake the cake in it 25-30 minutes or till the tooth pick inserted comes out clean.

  12. _______________ For Milk ____________

  13. Mix the coffee in some water and make coffee paste.

  14. Take milk in a mixing jar, add condensed milk and coffee in it and combine these well. Keep it aside.

  15. _____________ For Mocha Frosting ____________

  16. Mix the coffee in some water and make coffee paste.

  17. Beat the cream for 6-7 minutes till soft peaks forms in the cream.

  18. Add the prepared coffee mixture in the cream, beat it again till the stiff peaks forms. Keep it aside.

  19. ____________ For Assembling ______________

  20. When the cake is completely cool down, prick some holes in it with the help of fork or tooth pick.

  21. Pour the prepared milk over the cake, cover it and keep it in the fridge till the cake absorb all the milk completely.

  22. Take it out of the fridge and spread the prepared mocha frosting on top. Even the cream with the help of spatula.

  23. Decorate with chopped walnuts as per your choice.

  24. Keep it in the fridge for 3-4 hours before serving.

  25. __________ Note: For no oven coffee walnut cake with mocha frosting heat a big wok or pot on medium flame for 10 minutes with a wire stand in it.

  26. Put the cake pan in this heated pot, cover it and bake the cake on low flame for 25-30 minutes or till the tooth pick inserted comes out clean.
