Today's recipe of biscuit swiss roll cake is one of the easiest dorm dessert recipe.When we though about swiss roll cakes, a light sponge cake filled with cream or jam or some other kind of delicious filling. With so much variety of biscuits in market we are going to make our no cook swiss roll cake with biscuits. It is the recipe of a unique biscuit based cake roll, an ideal dessert cake recipe that can be prepared in minutes with very minimal ingredients. I used coconut filling for this no bake biscuit swiss roll cake recipe but you can replicate it with jam, whipping cream or any filling of your choice. Avoid using biscuits which are soft and has cream in between. I have used chocolate syrup to make the dough for outer layer of this biscuit swiss roll cake but you may replace it with cocoa powder and use milk as liquid for kneading the dough. And lastly if you are using chocolate biscuit reduce the quantity of cocoa powder or you may even skip it completely. So prepare this dorm room no bake swiss roll cake and treat your sweet cravings.

  1. In a mixing bowl add powdered biscuits along with coffee powder, melted butter and chocolate syrup. Mix well.

  2. Using your hand knead it into a semi soft dough.

  3. In another bowl add desiccated coconut, powdered sugar and cardamom powder.

  4. Gradually add milk and combine well. The filling should not be too runny. Keep it aside.

  5. Spread a parchment paper over the working surface and grease it with some butter.

  6. Place the prepared biscuit dough over it, roll it gently in a semi thick rectangle sheet. (you may use drinking glass or fondant roller for the rolling).

  7. Spread the coconut mixture over the rolled sheet evenly.

  8. Roll it tightly with the parchment paper.

  9. Let it be covered with parchment paper and place in the refrigerator for 2-3 hours.

  10. Cut into equal thickness slices and enjoy your dorm room no bake swiss roll cake.
