This is not a recipe that needs much of explanation as they are the easiest treat ever. The graham cracker sandwiches are the perfect snack or lunch for kids and adults. This not a typical no bake recipe and they are really easy and fun to prepare. Living in a dorm room where you don't have the option to bake (at least with a proper oven) these dorm room graham cracker sandwiches are perfect treat for your sweet cravings. You can choose to combine a variety of flavor mixtures to come up with the right flavor of your preference. The best part of these graham cracker cookie sandwiches is that not only they are easy to make but they are also budget friendly. Another nice thing about the recipe is that graham cracker sandwiches changes over time. When you first make it the crackers are crispy, so the contrast between crispy crackers and creamy frosting is quit apparent. But with the time the cookies (or crackers) will start to absorb some of the moisture from the frosting so they soften too. Either way they are delicious.

  1. In a bowl mix butter with one cup of powdered sugar together till they gets light and fluffy.

  2. Gradually add remaining sugar alternating between the sugar and cream until the frosting is fluffy.

  3. Add vanilla and salt, mix well.

  4. If you are using peanut butter add it now and combine it as well. (you may even divide the frosting in half to make half peanut butter and half vanilla frosting).

  5. Spread a generous portion of frosting over a graham cracker, top it with the second graham cracker and gently press.

  6. Eat immediately if you want crispy texture of graham crackers or let the cookies stand for few hours.

  7. ________ Note: You may prepare or add the frosting of your choice in these sandwiches like you can add cocoa powder to make chocolate version, or fruit jam there are endless options that you can choose.
