Korma is typically made by marinating meat in yogurt, ginner garlic and spices. It is then cooked in its own juices and a gravy made of onion, lot of tomatoes and some spices. Degi korma is a fancy version of meat curry. In India and Pakistan it is common to prepare degi korma on special occasions like weddings and large festive occasions. In a wok add cooking oil and let it heat over medium high flame.
Add yogurt in it and let it cook in the oil so it may curdle in the oil.
Add bay leaves, cloves, black cardamom, green cardamom, black pepper corns in yogurt and mix well.
Add ginger garlic paste in the yogurt mixture and cook for few seconds.
Add meat at this stage and mix well. The meat will release water and also there will be liquid of yogurt so this liquid will be enough for cooking the meat.
Now add salt, coriander powder, kashmiri red chili powder, red chili powder, turmeric powder in the meat and mix well.
Let the mixture come to the boil, once bubbling cover the wok and let the meat cook over low flame. If your meat is soft and can be cooked easily you may turn the flame to medium low as well. Let the meat cook for around 40-50 minutes or till its completely cooked.
Mean while we will prepare korma masala. In a grinder add mace, nutmeg, cumin seeds, cloves, green cardamom, cinnamon sticks and grind well.
Add dried coconut powder and almonds and grind these as well. Keep this masala aside.
When meat is cooked uncover the pot and give a mix.
Add kewra water and grind spices in the korma now and mix well.
Crush the fried onions with hands and add in the korma, mix well.
Add water and mix it, cover the pot again and steam cook all the spices for 10-15 minutes. The flame should be low.
Turn off the flame and take out korma in a serving dish.
