Gajrela or gajar kheer is a scrumptious and delicious Indo-Pakistan dessert that has an irresistible taste.The dish is driven from kheer which is also a classical subcontinent sweet dish made with rice, milk and sugar. Carrot kheer or carrot payasam as referred in south India required use of fresh and juicy carrots. So in winters when carrots are red, fresh and full of juice the dessert is made. We Pakistani also call it carrot rice pudding or gajar ki kheer and this dish is very special in Pakistani cuisine. Carrots beside being a great source of vitamin A and good for eyesight are also rich in antioxidants, vitamin C and contains elements that can purify blood and maintains healthy level of uric acid. Gajar ki kheer is very healthier and delicious pudding that is easily digestible and low in calories substitute to the more popular dish gajar ka halwa. I have given a step by step detailed recipe of gajar kheer, do give it a try this season and enjoy.
Wash and clean the carrots, grate these and keep aside.
Add milk in a pan, put it on medium flame, let it come to the boil and then add soaked and crushed rice along with grated carrots in it.
Cook on low flame, keep stirring in between, cook for 15 minutes.
Then cover and cook for 30 minutes on medium to low flame.
Now add cardamom powder and sugar in the kheer, let it cook for 15 minutes more.
When the carrots are softened and kheer has come to the required thickness add khoya, chopped nuts and mix everything well.
Take out in the serving dish, let it chill in the fridge before serving. Garnish as per your requirement. ( I showed 2 methods of garnishing one is with simple chopped nuts and the other is with chocolate syrup).
