Many of the recipes you make frequently can be divided into premixes that can be stored in multiple quantities for quick and easy cooking. When you want to make your favorite recipe, just combine the stored premix ingredients and finish the recipe quickly. Premix or instant mix is like a boxed mix you would buy at the store, but this one will be made in your own kitchen. It's also similar to the cookie/soup jar gifts that were popular a while ago. You can also gift this homemade premix to your loved ones.

Measure out multiple quantities of premixed ingredients and store the prepared premix with a copy of the recipe so that whenever required you could prepare it easily. Many types of recipes can be mixed ahead, such as cake mix, cookie dough premix, many Indian snacks and chutney recipes, etc. Breakfast premix is perfect for kids away from family, who have to cook themselves, premix is just a lifesaver, and you can enjoy your favorite fresh homemade breakfast in just 30 minutes. . When you have the time to do the preparation you might as well do multiple quantities.  Later when you have less time, you can enjoy the homemade recipe as the premix will come in handy.

Tea is a drink that everyone likes in their own way. There is no right or wrong way, just the way you like, is the best. Some people like it with a lot of ginger, others like it with cardamom, and there are those who can't stand the flavor in their tea and just want plain tea with tea leaves and milk.

It's fine at home, but when you're traveling, getting tea to your taste is a difficult task. Even if you give your specifications, there is no guarantee that you will get what you originally wanted. In such situations instant tea mix powder is born. You just add them to hot water and you are ready to drink your favorite tea. You don't need any fancy ingredients or go through a long process to make the instant tea premix powder. It's easily made with ingredients you already have in your kitchen and only takes 5 minutes.

To make this instant chai tea mix or instant tea powder, you actually grind the tea leaves with the spices of your choice, maybe cardamom or cloves or ginger powder or all. Once ground, you pass it through a sieve to remove the larger bits, if any. You can easily store it for months. I have not used spices in my instant tea premix but if you want you can add cloves, cinnamon, black pepper, fennel seeds etc. as per your preference. This way it will become masala tea premix. The recipe is of ready to drink tea and its a travel friendly recipe. Enjoy the flavor of your homemade tea any time anywhere by just adding hot water.



  1. In a bowl add milk powder, sugar, tea powder, cardamom powder, dried ginger powder, mix everything. (you can add inch of cinnamon stick, cloves, black pepper corns or fennel seeds as per your choice). 

  2. Add all these in a grinder, grind well.

  3. Pass this powder through a sieve, what remains in the sieve can be added to your jar of regular tea.

  4. Store this grind tea mix in an airtight container.

  5. To make tea simply put water to boil. I used 2 cups of water for making my tea.

  6. Once the water comes to a rolling boil its ready to make the tea.

  7. Add 2 tablespoon of tea premix in a jug/kettle, pour the boiling hot water over this premix, mix well. (if you want to make it more milky feel free to add more milk as per your liking).

  8. Cover the lid and let this rest for 5 minutes so that flavors could bloom. 

  9. Tea is ready to serve, ideally run it through a strainer while pouring in the cups. But if you are travelling and if you don't have sieve just make sure not to pour in the tea which you see in the bottom of the jug.
