Chinese egg rolls are a great starter for any Asian style meal or a great snack for kids. Stuffed with so many vegetables and chicken these egg roll are super crispy and bursting with flavors. These kids special Chinese chicken egg rolls make a nice change from sandwiches and are great for lunch box. It is easier than you think to make restaurant worthy Chinese chicken egg rolls in the comfort of your kitchen.

An egg roll is a deep fried appetizer find on many Chinese American restaurants' menus. It consists off a thick, crispy wrapper filled with vegetables, pork and other ingredients. Here I am using chicken instead of pork but you may use protein of your choice. Also most of the recipes on internet uses store bought egg roll wrappers, but I am sharing here method of homemade egg roll wrappers preparation. It's your choice whether you want to use store bought wrappers or the homemade ones. The recipe of these kids special Chinese egg rolls is so easy that you will prepare it again. The best thing is you can make and freeze these egg rolls easily. I have shared a detailed method of freezing in the recipe below with so many other tips. Make sure to check the recipe and try these for your kids.

  1. ________For Egg Roll Wraps __________

  2. In a mixing bowl add eggs, salt and milk, combine well.

  3. Add all purpose flour, baking powder and corn flour in the egg mixture, mix it well. It should be smooth without lumps.

  4. Heat a frying pan on low flame, add 2-3 drops of cooking oil in the pan.(The pan size depends on you how bigger you want your egg rolls).

  5. Measure about 1/4 cup of prepared egg rolls batter and pour it into the pan, quickly swirl the pan so that batter spread evenly. The bottom of the pan should be covered completely. ( Do not add too much batter as the sheet will become thick too much).
     

  6. Cook for 2 minutes from each side or till it becomes light golden brown. Take it out and keep aside.
     

  7. Prepare the egg roll wraps with remaining batter in the same way.

  8. ____________ For Stuffing ___________

  9. Heat the cooking oil in a pan on medium flame.

  10. Add the chicken mince in it and cook till the chicken mince changes its color.

  11. Add garlic powder, and salt, mix well.

  12. Add carrots and fry it with chicken for a minute.

  13. Then add chopped cabbage and capsicum and mix well.

  14. Add soy sauce, black pepper powder and again mix everything.

  15. Turn the flame to high for about 2 minutes, Stir in between and then turn off the flame. Stuffing for egg rolls is ready keep it aside to cool down.

  16. ____________ For Assembling and Frying _________

  17. Make a slurry of 2 tablespoon all purpose flour and 2 tablespoon water, we will use this for sealing the egg rolls.

  18. Over a prepared egg roll wrap add about 2 tablespoon of stuffing, fold bottom corner over the filling, then fold the side corners towards the center over the filling.
     

  19. Brush some corn flour slurry over the remaining portion of wrap, continue to tightly roll the egg roll up, pressing in the ends until it is completely sealed. If your egg roll is not properly sealed, it will leak when cooking.

  20. Prepare all the egg rolls in the same way.

  21. ___________ For Frying ____________

  22. Heat oil in a frying pan over medium to low flame and fry rolls for 2 minutes each side or until light golden brown.

  23. Your tasty kids special Chinese chicken egg rolls are ready to serve.

  24. __________ Note: You may freeze the the egg rolls before frying, put these over a parchment paper, cover with plastic wrap and let these freeze. Then store in any zip lock bag.
