Qulfa or qulfi is one of the favorite food of summer season. Kulfa is a popular dairy dessert originated in the Mughal era of India. It is often described as traditional ice cream. To get the thick and creamy texture of kulfa, traditionally milk is boiled for some time to reduce a bit along with adding khoya and dry fruits in it which is a bit time taking process. Today I am going to share homemade kulfa pre mix recipe so that you can use it anytime to make kulfa easily. This involves less efforts and cooking and the taste is amazing. This instant kulfa pre mix recipe will give you the opportunity to beat the heat of long hot summer days easily. Believe me it tastes yummy and you will want it again and again once you tried it.   1. First break the bread slices into big pieces and add in a grinder or food processor to make fresh bread crumbs from these.

  2. Put a pan on low flame and add these fresh bread crumbs in it.

  3. Dry roast on low flame for 8-10 minutes until they turn golden brown.

  4. Let these cool down completely.

  5. Now in a grinder add pistachios and grind well. Take out and put aside.

  6. Grind almonds as well and put aside.

  7. Grind sugar into fine powder as well and put it aside.

  8. In a bowl combine green cardamom powder, grind pistachio, almonds and sugar.

  9. Then add dry milk powder and dry roasted bread crumbs in it.

  10. Add sliced almonds and pistachios as well in this mixture.

  11. Give a good mix to everything to combine well.

  12. Homemade kulfa mix is ready. Store it in any airtight glass jar for up to 1 month.

  14. In a pan add 1 liter milk and boil on medium flame.

  15. After the boil cook the milk on medium flame for 6-8 minutes.

  16. Then add 1 cup of homemade kulfa mix in it, mix continuously and let it cook on medium flame until it thickens. This will take about 10 minutes.

  17. Take the pan of the flame and let the kulfa cool down.

  18. Then add fresh cream in it and mix well.

  19. Add into a box and top with chopped almonds and pistachios for garnishing.

  20. Freeze for almost 1 hour to cool down completely.

  21. Tasty and easy to make kulfa with homemade kulfa mix is ready to serve.
