Lauki gosht or kaddu gosht is a popular daily recipe that everyone loves to eat. Kadu gosht is made frequently in almost all Punjabi households. Known by many names in different regions of Pakistan and India, this healthy vegetable is easy to cook as well as its health benefits cannot be denied. Lauki, kaddu or gia is a vegetable called bottle gourd in English. It can help reduce stress, aid in weight loss, prevent premature hair loss, improve skin tone and aid in digestion. Bottle gourd is a vegetable that is high in water and is a rich source of vitamin C, K and calcium. It helps maintain a healthy heart and lowers bad cholesterol levels.
This lauki gosht recipe is very easy and makes a comfort food to follow. This lauki gosht recipe will serve you tender pieces of meat with the most delicious juicy bottle gourd pieces. I used beef for this recipe but you may use mutton as well.
In a pressure cooker add beef, sliced onion, salt, red chili powder, coriander powder, turmeric, cumin seeds, garlic paste and water.
Give a stir, put the lid of pressure cooker and pressure cook the meat for 4-5 minutes or till the beef is 80% done. Do not fully cook it at this stage as we will further cook the meat with lauki as well.
Peel the lauki (bottle gourd) and then cut into large chunks (about 1.5 inch large). Keep these aside.
When the pressure is released uncover the cooker and give a stir.
Add cooking oil at this stage, mix and dry out the excess water of beef over high flame.
Add lauki pieces in and cook for 2-3 minutes with beef.
Add 1 and 1/2 cup of water, cover the lid again but do not give pressure this time. Let the lauki cook over medium heat for 8-10 minutes or till it turns soft.
Add chopped fresh coriander, give a stir, turn off the flame.
Tasty, easy and healthy shorbay wala lauki gosht is ready to enjoy with roti naan or boiled rice.
