Quick and instant breakfast recipes are always one of the popular demands, and this is an easy and simple breakfast mix recipe, which can be used to make a variety of South Indian breakfast recipes. South Indian breakfast recipes take a lot of time to prepare, and fermentation can be a problem so I thought of making something quick and a basic recipe too. As we all know, rava or semolina is an ingredient that can be used to replicate almost all South Indian breakfast recipes, so I choose it and I am sharing multipurpose breakfast mix recipe here. Breakfast premix is perfect for kids in hostel who have to cook themselves. This premix is just a lifesaver, and you can enjoy your favorite fresh homemade breakfast in just 30 minutes.
This is one of the ideal hack recipes that can be made once and used in multiple breakfast recipes. In this recipe, I have shown how to make upma, idli and vada with this breakfast premix, but the options are many and can be used as per preference. Use coarse or medium sized rava for this recipe. Other sizes of rava are not suitable for this recipe, especially fine size rava. Secondly, if you are planning to store it for a few months, do not add any moist material. If you want to finish it in a couple of weeks, you can add fried onions. Finally, for the idli and vada, I have added eno salt and baking soda to make it more attractive and fluffy but you can skip it as it is not an essential ingredient.
In a thick heavy bottom pan add rava/suji and roast it over low flame for 12-15 minutes. Make sure to roast the semolina really well as the recipe may turn sticky.
Transfer the roasted semolina in a bowl and let it cool down completely.
Now in the same pan add ghee and heat it over low flame.
Add mustard seeds in it and when they start to crackle add chopped curry leaves, urad dal, channa dal, hing and dried red chili in it. roast all these things well.
Add cashew nuts, chopped green chilies and chopped fresh coriander in it, roast these well.
Transfer these roasted ingredients in the semolina bowl, add salt and mix everything well.
Multipurpose breakfast mix is ready, store in any airtight container for up to 1 month easily.

In a bowl add breakfast mix along with curd, mix well.
Cover the bowl and set it aside for 15 minutes.
After the resting time give a mix again, rava would have absorbed all the moisture of curd.
Add water and adjust the consistency of batter.
Grease the idli plates with ghee/oil, pour the batter in idli plates and steam cook on high flame for 12 minutes.

The same batter that used to make idli can be poured in appe cavities for making instant appe.
Cover and cook on low flame, flip the sides and cook from both sides.
____________ Vada with Breakfast Premix ______________
In a bowl add brekfast mix, curd/yogurt along with water, mix well.
Cover the bowl and set aside for 10 minutes.
Mi the batter again, grease hands with oil and shape vadas from the batter.
Deep fry the vadas on medium flame till they turn crispy.
