Eclairs or chocolate eclairs are a popular pastry found in many French bakeries. This chocolate eclair cake takes all the best parts of an eclair (the filling and chocolate ganache) and turns it into an easy-to-make no-bake dessert. Chocolate Eclair Cake is an old fashioned sheet cake that requires no baking and is reminiscent of a chocolate coated, creamy eclair. Made for generations, this no bake cake is always one of the most popular desserts for any gathering.
Most of the recipes found on internet of no bake eclair trifle requires whipping cream, instant pudding and graham cracker. Here I am sharing an easy version of this no bake chocolate eclair cake dessert. This is recipe of eclair cake without graham crackers. Instead of graham crackers we will use simple biscuits like Parle-G (or Tiger biscuits) that are easily available everywhere. Also we will use fresh cream or table cream instead of whipping cream. We will prepare the pudding easily at our stove top to reduce the cost of this no bake sweet dish. Do give this recipe a try I am sure you will say this is the best eclair cake you ever tasted.
In a pot add milk, sugar, cocoa powder, all purpose flour and whisk everything well.
Turn on the flame now and keep medium low heat below the pot. Stir continuously and cook the milk mixture well.
Add vanilla essence and mix well..
Cook stirring continuously till the mixture becomes thick.
When it starts sizzling from the sides of the pot add butter in it and stir it till its completely dissolved.
When the mixture starts bubbling turn of the flame and remove the pot and let the pudding come to room temperature.
In a serving dish ( I used 10x10 square dish) place biscuits as a base layer of the dish.
Soak the biscuits with some milk, but be careful do not over soak.
Make a second layer of biscuits so that base of dessert should be thick. Soak this layer of biscuits with milk as well.
Add a layer of fresh cream over the biscuits, spread evenly.
Then again spread 2 layers of biscuits over the cream layer, soak each layer with milk just as we did for the base layer.
Now add the prepared chocolate pudding over the biscuits and spread evenly.
Make a layer of biscuits over the pudding layer, soak with milk and layer the remaining fresh cream over these biscuits.
Add the final 2 layers of biscuits over the cream layer, soak each layer with some milk.
Top with remaining chocolate pudding and smooth the surface as much as you can.
Crush some biscuits with hands and spread over the top for garnishing. I used white chocolate chips and a chocolate truffle for garnishing as well.
Let the dessert set in the refrigerator for about 1-2 hours or over night.
No bake eclair trifle sweet dish is ready to enjoy.
