Sugar free dates dryfruits roll or khajur barfi is a naturally sweetened vegan recipe that is healthy and easy to prepare. The recipe of no sugar dates dryfruit roll that I am going to share today will steal your heart and is perfect for any celebration. What makes this dates and nuts roll even amazing is that it has, no gluten, no eggs, no sugar in it. The sweetness in these rolls drives from dates and it is enriched from nutrients in the nuts. This is a nutritious and delicious snack and can be prepared easily in 30 minutes. If handling dates is difficult in making rolls, you can even make khajur laddoos with this mixture. I made laddu with the mixture that was extra from the edges. I hop you will like this recipe.
Heat a pan on low flame and dry roast the poppy seeds in it. Take out in a bowl and put aside.
Heat 1/2 teaspoon of ghee or butter in the same pan and roast the chopped nuts in it. Do not over roast as the nuts will burn. Also keep the flame low.
Take out the roasted nuts in a bowl and keep these aside as well.
Heat again 1/2 teaspoon of ghee in the same pan and add seedless dates in it. Let the dates cook on low to medium flame for 7-10 minutes.
Keep stirring until the dates become very soft.
Now add pinch of salt and cardamom powder in the dates mixture. Combine well.
Take off the stove and let the dates mixture rest for a while.
In the roasted nuts add 1 teaspoon of prepared dates mixture and honey. Mix well. These will create binding in the nuts while we add these in rolls.
Also add some of roasted poppy seeds in this mixture and combine well.
Put an aluminum foil on a flat surface and grease it with ghee.
Transfer dates mixture on it, apply some ghee on it as well.
Place a plastic wrap over it as the mixture will be hot and flatten it with the help of rolling pin. Try to roll it into a slightly thick sheet.
Then place the dry fruits mixture in the middle of it and roll this dates sheet over the dry fruits with the help of foil.
Cut the edges and extra portion of dates mixture. Seal the edges properly.
Spread some roasted poppy seeds and chopped nuts over the foil and move the dates roll over it so that it get covered with poppy seeds and nuts all around.
Keep the roll in the refrigerator for 15-20 minutes so that it gets firm completely.
Take the roll out and cut into slightly thick pieces along with foil with a sharp knife. The foil will help to cut the roll easily.
Remove the foil around the pieces and take out on a serving plate.
