Phool makhanay ka halwa is an amazing and unique variation to the typical halwa recipe. Makhana is also known as phool makhana, lotu seeds, foxnuts, fox nuts or gorgon nut. It has got very distinct and delicious taste. Makhana halwa or lotus seed dessert is a winter special recipe, a nutritious sweet dish made with makhana, milk, sugar and ghee. Both phool makhana and milk are rich in calcium so this is an interesting and new way of providing calcium to your body along with taste. Lotus seed or makhana is rich in fiber and low in calories hence a powerful food for those who want to reduce their weight. Makhana halwa is a very popular food for fasting. In a frying pan add phool makhana (lotus seeds) and dry roast these on low flame for 4-5 minutes. Stir occasionally till they turn crispy. Take out and keep aside to completely cool down.
Now in the same frying pan add besan (gram flour) and dry roast it as well till it turns fragrant. Stir continuously so it may not burn. This will take about 2-3 minutes. Take it out and keep aside to cool down.
In the same frying pan add some ghee (clarified butter) and let it melt completely.
Add nuts (pistachio, almond, cashew) and fry for 2 minutes. Take out and keep aside.
Add some more ghee in the frying pan and let it melt.
Add khoya and let it melt on low flame. This will take 2-3 minutes. Keep it aside as well.
When the makhana is cool down completely add it into a grinder and coarsely grind it. Do not make fine powder. Keep it aside.
Now in a wok add remaining ghee and let it melt.
Add coarsely grind lotus seeds, roasted gram flour in it. Mix well and cook on medium flame for 3-4 minutes.
Add cardamom powder, give a mix and cook for 2 minutes more.
Add sugar, combine it and cook the halwa for another 4-5 minutes.
Now add milk in the halwa, cook it on low flame for 2 minutes while stirring continuously.
Add a pinch of orange food color, mix it well and cook the halwa for another 2-3 minutes until the halwa start to leave the sides of the wok.
Add melted khoya and roasted chopped nuts in the halwa, mix well.
Delicious phool makhana halwa is ready in 30 minutes, take out in the serving bowl and garnish with silver warq and chopped nuts.
