Potato pancake falls into the wonderous category of comfort food as they can be enjoyed any time of the day, any day of the year and for virtually any occasion. Potato pancakes are shallow fried pancakes of grated or ground potatoes, rice mixture or flour as the binding agent and seasoned with garlic or onion. I strongly believe this is one of those recipes that every family should have as it requires just few ingredients and I have never met a person who doesn't like them. Potato pancakes are famous with different names like potato latkes, Reibekuchen and sometimes Kartoffelpuffer. Here I am sharing no eggs potato pancake recipe that resulted in delicious pancakes when served hot and make for a filling meal. I used rice paste as binding agent here so this is a totally healthy vegan potato pancake recipe.

Ingredients

Directions

  1. In a grinder or blender jug add soaked rice (with its water), garlic and ginger. You may add more water if required. Make a fine paste of rice and keep aside.

  2. Peel the potatoes and grate coarsely.

  3. Using a kitchen towel or  by hands drain the excess water as much as you can. Do not strain the potatoes with fresh water as the starch will be removed and we need the starch as binding agent here.

  4. Add the prepared rice mixture in the potatoes and mix well. If you feel the mixture is too thick add a bit of water to make it a bit thinner but not too runny.

  5. Spread some cooking oil in the pan and hat it over medium to low flame.

  6. Spread about 1/4 cup of potato pancake mixture in the pan, give it a shape of pancake as much as possible, cover the pan and let it cook for 4-5 minutes.

  7. Flip the side and cook for 1-2 minutes from the other side as well or till you see golden brown color.

  8. Transfer to a plate and enjoy these kids friendly potato pancakes with ketchup or any other of your kids favorite dip.

I experienced that cooking doesn't need to be threatening. I didn't figure out how to cook as a child. No treats or cakes with Grandma. Never helping mother cook meals. I needed to learn as a grown-up, due to legitimate need. I needed to figure out how to cook. So I just began cooking. It was unpleasant from the outset. I attempted to sear garlic, and everything turned green. It was one Pinterest fall flat after the other until I at least began to get its hang. For some time, I; despised cooking feared it with each fiber of my being. And one day; I, began anticipating it. I would be at my work area and begin pondering what I could make for supper. I began to get amped up for evaluating new plans, concocting something all alone, or utilizing new fixings. It got fun. Also, that is something I need to impart to you. Cooking is fun and energizing, and regardless of whether you think you will suck at it, recall, even I can cook.
