Potato pancake falls into the wonderous category of comfort food as they can be enjoyed any time of the day, any day of the year and for virtually any occasion. Potato pancakes are shallow fried pancakes of grated or ground potatoes, rice mixture or flour as the binding agent and seasoned with garlic or onion. I strongly believe this is one of those recipes that every family should have as it requires just few ingredients and I have never met a person who doesn't like them. Potato pancakes are famous with different names like potato latkes, Reibekuchen and sometimes Kartoffelpuffer. Here I am sharing no eggs potato pancake recipe that resulted in delicious pancakes when served hot and make for a filling meal. I used rice paste as binding agent here so this is a totally healthy vegan potato pancake recipe.
In a grinder or blender jug add soaked rice (with its water), garlic and ginger. You may add more water if required. Make a fine paste of rice and keep aside.
Peel the potatoes and grate coarsely.
Using a kitchen towel or by hands drain the excess water as much as you can. Do not strain the potatoes with fresh water as the starch will be removed and we need the starch as binding agent here.
Add the prepared rice mixture in the potatoes and mix well. If you feel the mixture is too thick add a bit of water to make it a bit thinner but not too runny.
Spread some cooking oil in the pan and hat it over medium to low flame.
Spread about 1/4 cup of potato pancake mixture in the pan, give it a shape of pancake as much as possible, cover the pan and let it cook for 4-5 minutes.
Flip the side and cook for 1-2 minutes from the other side as well or till you see golden brown color.
Transfer to a plate and enjoy these kids friendly potato pancakes with ketchup or any other of your kids favorite dip.
