Today I am sharing again a simple and easy to prepare recipe. This recipe involves no mixer, no butter or no fancy tools. This is a super easy spongy vanilla cupcakes recipe that comes together super fast. It is recipe of vanilla cupcakes in a blender. You will love this recipe as no mixer required. You may even prepare this recipe without oven. So you can easily call these no oven vanilla cupcakes recipe. These are prefect spongy cupcake with a detailed step by step recipe. You can even skip the eggs if you are a vegetarian. I have given the substitutes of eggs to make no eggs vanilla cup cake. Hope you will try this recipe.

  1. In a blender add eggs, oil and sugar.

  2. Blend all these things together and take out in a bowl.

  3. Put a strainer on the bowl and sift all purpose flour, baking powder and baking soda through it.

  4. With cut and fold technique combine the dry ingredients in the egg mixture till a lump free smooth mixture form.

  5. The batter will be stiff at this stage so gradually add milk in it and mix it to make cake batter of slightly thick consistency.

  6. Add vanilla essence and mix it again a little bit.

  7. Now take the cup cake mold and add cupcake liners in it.

  8. Pour the cake batter inside the mold. Gently tap the pan on shelf for 1-2 times to remove the air bubbles from it.

  9. Pre heat the oven at 180°C for 20 minutes.

  10. Put the cupcakes mold inside this pre-heated oven, let the cup cakes bake at 180°C for 35-40 minutes.

  11. After the baking time take the cupcakes out, let these cool down till these comes to the room temperature.

  12. Take the cupcakes out of mold and gently remove the liner.

  13. Soft, spongy and easy to prepare vanilla cup cakes in blender are ready.

  14. _________Note: You can prepare these vanilla cupcakes without oven as well. Pre heat a big pot with a wire stand in it for 10 minutes at medium to low flame. Bake the cupcakes at medium to low heat for 35-40 minutes.

  15. I did not decorated these cupcakes but you can use any frosting of your choice.
