sheer khurma or sheer khorma is a classic vermaceili milk pudding with lots of nuts, dates and sugar. It is a traditional Eid dessert in Muslim families of India and Pakistan.Eid festivities are kind of incomplete until and unless you have Sheer Khurma. 

This is a creamy and flavorful vermicelli pudding recipe that couldn’t be easier or more delicious. Also it is a 30 minutes sheer khurma recipe. In my home it is kind of compulsary for my father to eat sheer khurma before leaving for Eid prayer. 

The word ‘seviyan‘ itself refers to the South Asian-style vermicelli pasta used to make all types of desserts. Seviyan can be prepared dry (Sukhi Seviyan) or with milk (Doodh Seviyan/Seviyan Kheer or Sheer Khurma). Here is one of the easiest and quick Pakistani recipe of sheer khurma that I am sharing. Do give it a try and your family will surely love it.



  1. In a frying pan add 1 tablespoon butter or ghee and let it melt.

  2. Add chopped nuts (pistachio, cashew, walnuts, almonds, dried dates) in it an.

  3. Roast these on low flame while stirring continuously so these may not burn.

  4. When the starts to release their aroma (this will take about 5-7 minutes) the nuts are roasted, take these out of pan and keep aside.

  5. In the same pan add 1 tablespoon of more ghee or butter and now add vermicelli (seviyan) and roast these over low flame till they changes their color. Stir continuously so they may not burn. 

  6. After vermicelli roasted turn off the flame and keep the pan aside.

  7. In a pan add milk and cardamom. Let the milk come to boil.

  8. Now add condensed milk in it and stir it. Condensed milk will give sheer khurma a rich creamy taste.

  9. Also add raisins in the milk along with all roasted nuts and mix well. 

  10. Add sugar in the milk and mix well. Let the milk on medium flame for 5-6 minutes.

  11. Add roasted vermicelli in the milk, give a stir and let these cook over medium flame for 8-10 minutes. Do not stir it constantly just stir in between. 

  12. When the milk is thickened and vermicelli is fluffed completely sheer khurma is ready. 

  13. Turn off the flame, take out in the serving dish and enjoy this Eid special sheer khurma.
