This creamy homemade butterscotch pudding comes together in minutes with a silky smooth, rich and creamy texture. 

You’ll see from the list of ingredients that there are not any surprises here. Most, if not all, you will have on hand. That’s what makes this recipe so endearing.   1. Chop the almond and cashews in small pieces, put in a plate and keep aside.

  2. In a pan add sugar and put it low to medium flame, let the sugar melt, stir it in between.Do not turn the flame to high as the sugar will burn because of it.

  3. When the sugar completely melts and its color turn to golden brown add a pinch of baking soda in it and stir immediately.

  4. Now add butter in the melted sugar and mix it.Butter scotch is ready turn off the flame.

  5. Pour 3-4 tablespoons of this butterscotch over chopped almonds and cashews. spread it as much as you can with a spoon to coat all the nuts pieces evenly. Let the butterscotch completely cool down over the nuts.This will form into a butterscotch crunch when completely cooled and get hard.

  6. After a minute this will get hard, break it into chunks.

  7. Add these chunks into a zip lock bag and crush this crunch with pestle or rolling pin (bailan). You can even grind it if you want to make it more fine.Butterscotch crunch is ready.

  8. In the remaining butterscotch add malai or fresh cream and mix it.

  9. Turn the flame on again on medium to low flame and cook it. Stir the caramel sauce continuously so it may not stick to the bottom. When the crunch is completely melt and come into a sauce like consistency turn off the flame. Caramel sauce or toffee sauce is ready for pudding.

  10. Take a bowl and add heavy or whipping cream in it. Whip the cream till stiff peaks from.

  11. Add 2-3 tablespoon of butterscotch sauce and 2 tablespoon of grind butterscotch crunch in this cream. Beat the cream again for 1 more minute to combine everything well. 

  12. Trim the edges of the bread, take a slice and dip it in the butterscotch pudding, put it into the serving dish. 

  13. Add a layer of soaked bread in the bottom of dish, then spread some butterscotch crunch over it.

  14. Add butterscotch mixed whipping over it and spread it evenly to make a layer.

  15. Repeat the process of bread layer, butterscotch crunch and then the layer of whipped cream over top. Smooth the cream layer with a spatula or spoon.

  16. Spread some crunch again over top of the cream layer along with some chopped pistachios for garnishing.

  17. Put the dish in the fridge for 2-3 hours so that it could get completely set.

  18. Delicious, creamy butterscotch dessert in 10 minutes is ready to enjoy. 

  19. ___________Note: (If you are using the type of whipping cream which is not sweet

  20. already add 2 tablespoon of powdered sugar in the cream while whipping it to make it sweet.
