Chicken macaroni salad is one of the simple side dish that you will want to hang on. A creamy, flavorful, cold chicken macaroni salad recipe with loads of chicken, veggies and a sweet surprise in form of raisins and pineapple chunks. Many people get confused between pasta salad and macaroni salad but there is a huge difference. Pasta salad is made with a vinaigrette dressing that has a base of vinegar and oil. Chicken macaroni salad on the other hand is creamier, a little sweet and typically made with a mayonnaise based dressing. This is a crowd pleasing recipe at family gatherings and parties. Good thing about this cold chicken macaroni salad is that the recipe can be doubled (or tripled) for a large crowd and can be prepared ahead of time for less stress on the day of gathering.
Take water in a pan and add chicken pieces.
Let the chicken boil completely, drain water and keep it aside to cool down.
Now take water in another pan and cook macaroni as per package instructions. (Do not over cook the macaroni as it gets tossed with huge amount of mixed ins and you need it form enough to hold its shape).
Drain and put it aside.
In a large bowl add mayonnaise, sugar, milk and black pepper and mix well.
Now add macaroni, chicken, carrots, onion, pineapple, capsicum, green onion leaves and raisins.
Mix everything well and refrigerate for 2 hours to give the flavor time to blend together. Give it another toss before serving.
