As ramazan (Ramadan) is approaching we love to have some snakes for iftar time. The recipe that I am sharing today is a make and freeze snake chicken and potato croquettes. These are crispy, crunchy made with mashed potatoes, chicken, capsicum, cheese and very few spices. As much as we love to east the crunchy chicken croquettes we cannot ignore the fact that they are on pricy side. So prefer the homemade ones. Though these croquettes are best enjoyed as snack with tea (chai), or for kids lunchbox but you may also enjoy these as chicken and potato croquettes-iftar special. Make and freeze these for this ramadan, I am sure your family will love this.

  1. _____________For Boiling chicken and Potato _____________

  2. In a sauce pan add chicken and peeled potatoes along with ginger garlic paste and water.

  3. Let these boil till completely tender and water dries out completely.

  4. Take out the chicken and shred it. Also mash the potatoes separately.

  5. ______________ For Chicken Potato Croquettes ___________

  6. In a frying pan add cooking oil and butter and let this heat on low to medium flame.

  7. Then add chopped white part of green onion in it and cook it for 1 minute.

  8. Add chopped green chilies, cook for a minute.

  9. Add boiled and shredded chicken in the pan, chopped capsicum, salt, chili flakes, mix herbs and combine everything well.

  10. Cook on low to medium flame for 2-3 minutes.

  11. Add boiled and mashed potatoes in this chicken mixture, combine well.

  12. Chicken croquettes mixture is ready, turn off the flame and keep it aside.

  13. In another mixing bowl break the bread in small pieces, then add milk in it, mash well with hands.

  14. Add chopped green part of green onion, cheese and prepared chicken and potato mixture. Mix well and a hard mixture will be ready.

  15. Take some mixture in the hand and give it a shape of croquettes, coat in all purpose flour, then dip in beaten egg and then coat with bread crumbs.

  16. Repeat the process with complete mixture.

  17. Put these in the freezer till solid and then keep in any zip lock bag. You may store these for up to 1 month in freezer.

  18. For frying heat the cooking oil on medium flame, temperature of oil should not be very hot.

  19. Fry the croquettes for 2-3 minutes till they turn golden brown from all sides.

  20. Make and freeze chicken potato croquettes are ready to serve.

  21. ___________ Tips: You may skip the cheese if you do not want to add it.

  22. Do not defrost the croquettes before frying.
