Eid is upon us and making sweet is a tradition and Sunnah of Prophet PBUH. I already shared recipe of homemade instant sheer khurma mix on my website in this regard. Today I am going to share another delicious and quick dessert recipe for Eid or any other family occasion. This is a 15 minutes dessert recipe with 2 cups milk which tastes like malai cake. But the preparation of this malai cake is not difficult as we do not need to prepare any rabri or involves so much cooking. This recipe is an eggless instant malai cake recipe in 15 minutes. Do try and enjoy a lot of appreciation from your family.
__________ For Preparing Sugar Syrup __________
In a pot add water, sugar and cardamom powder.
Heat it on medium high flame till the sugar dissolves.
When the sugar melts completely cook it for for 4-5 minutes. We do not need any strain in the syrup we just need the syrup a little bit thick, it should feel sticky if you check it between your thumb and finger.
Add a little bit of lemon yellow food color. Give a mix, turn off the flame and put the syrup aside.
______________ For Dessert Preparation ______________
Take out almost 1/2 cup of milk from the 2 cups of milk that we are going to use, keep it aside for later use.
Add remaining milk in another pot along with sugar and put the pan on medium flame.
Give a mix to everything, then add fresh cream or malai in this milk mixture.
Let the milk heat on medium flame.
In the 1/2 cup of milk that we kept aside add corn flour and mix to make a lump free slurry.
Turn the flame of milk mixture to low and slowly add corn flour mixture in it while stirring continuously so that lumps should not be formed.
Continue cooking on low medium flame till the mixture starts thickening.Make sure to stir continuously to avoid lumps.
After a while of cooking the milk will be thickened. Check the thickness with the help of a spoon. If the mixture completely coats the back of spoon it means the mixture is ready.
Turn off the flame.
______________ For Dessert Assembling ______________
Take a serving dish, first add a layer of cake rusk in the bottom.
Pour half of the sugar syrup over it so the cake rusk soak completely.Make sure the syrup should be warm not completely cold so that cake rusk could soak it and get soft.
Pour half of the milk mixture over the cake rusk and it should also be hot not cold
Spread some of the desiccated coconut over the milk layer.
Then again add a layer of the cake rusk, pour remaining half of the sugar syrup over the rusk, then the final layer of remaining half of milk mixture.
Add the chopped dry fruits over the top for garnishing.
Keep the dish in the fridge for 2-3 hours. Serve chill and enjoy.
