Floating islands or Iles Flotantes in French is made of small meringue [islands] that float in crème anglaise. These decadent meringue [islands] in a [sea] of custard are instant crowd pleases with looks and taste both. I love making this dessert in the summer because it's always delicious, the presentation is beautiful, and it's wonderfully light and airy. Also this no bake floating custard is surprisingly easy to make which is why I prefer to make it. Best of all, you don't need any special equipment to make this show-stopping dessert beyond what you already have in your kitchen. The floating dessert is a light and fancy sweet treat to end your dinner party. Meringue floating on custard, you may call it a royal treat but with less efforts, time and cooking.

  1. In a pot add egg yolks, sugar, milk powder, custard powder in it.

  2. Gradually add milk and whisk together so that lumps should not be formed. 

  3. Add remaining milk and combine together.

  4. Add vanilla essence/extract and whisk it as well.

  5. Put the pot over medium high flame and start cooking this mixture. As soon as the mixture will start to get warm stir it in between so the custard may not stick to the bottom and it should be lumps free.

  6. Mean while take egg whites in a bowl and beat these to make meringue. 

  7. Gradually add sugar while beating the egg whites. Beat till the stiff peaks forms in egg whites.

  8. When the custard became a bit thick turn the flame to medium low and continue stirring it. 

  9. Drop the meringue by heaping tablespoons into the custard to make islands. Let these cook for 2 minutes from one side.

  10. Sprinkle some chopped pistachios over the custard.

  11. Turn the meringues to the other side and cook from the other side for 2 minutes as well.

  12. Take out in the serving dish, garnish with some chopped pistachio, put it in the refrigerator till its completely chilled. I chilled it for about 90 minutes.

  13. Quick, easy to make and delicious floating custard is ready to enjoy.
