With the names of summer one thing surely cam in mind ...... Mangoes. Who does not like the flavor of sweet mangoes? Mangoes are closely connected to our lives and when the summer season is in full blast we can resist the temptation to taste something made of mangoes.

Today's recipe is a delightful fried mango cake recipe that you can add to your collection of mango recipes. The recipe of this tea time fried mango cake is so easy that you can prepare it in 20 minutes and your kids will love this sweet mango cake treat. Although the recipe involves egg in it, but you can substitute it with condensed milk as per your choice. Surely I am going to share some other mango base recipes too mean while try this one and I hope you will enjoy it.

  1. Strain all purpose flour and baking powder through a strainer. Keep aside.

  2. In a mixing bowl beat the egg along with sugar. Beat until the sugar completely dissolves.

  3. Now add the strain flour and baking powder in the egg mixture and combine well.

  4. Then add dry milk powder and cooking oil in this mixture. Combine everything well. If your mixture looks too dry add 1-2 tablespoon of liquid milk in it but do not add too much as we need a semi thick consistency of batter.

  5. Add chopped mangoes in the mixture and give a soft mix.

  6. Put some oil in a wok and heat it on medium flame until it became slightly hot.

  7. Grease your hands with oil, take some of the cake batter and add into the hot oil. You can use spoon for this purpose as well.Do not over flow the pan with cake batter as it will decrease the oil temperature.

  8. Fry the cake on medium flame till it turns golden brown from all sides.

  9. Take out and repeat the process with complete batter.

  10. Dust some powdered sugar on top and your delicious and easy fried mango cake balls are ready to enjoy.
