Many of the recipes you make frequently can be divided into premixes that can be stored in multiple quantities for quick and easy cooking. When you want to make your favorite recipe, just combine the stored premix ingredients and finish the recipe quickly. Premix or instant mix is like a boxed mix you would buy at the store, but this one will be made in your own kitchen. It's also similar to the cookie/soup jar gifts that were popular a while ago. You can also gift this homemade premix to your loved ones.

Measure out multiple quantities of premixed ingredients and store the prepared premix with a copy of the recipe so that whenever required you could prepare it easily. Many types of recipes can be mixed ahead, such as cake mix, cookie dough premix, many Indian snacks and chutney recipes, etc. Breakfast premix is perfect for kids away from family, who have to cook themselves, premix is just a lifesaver, and you can enjoy your favorite fresh homemade breakfast in just 30 minutes. When you have the time to do the preparation you might as well do multiple quantities. Later when you have less time, you can enjoy the homemade recipe as the premix will come in handy.

Coriander Mint Chutney also known as green chutney, dhanya podina chutney is a quick, easy condiment or sauce that goes well with every Indian snack and chaat. Green chutney is a spicy Indian condiment made from coriander, mint, ginger, garlic, green chilies, lemon juice and a few spices. Chutneys are served as a dip with snacks and even along with some main courses.  Every household has its own ratio for making green chutney. The recipe that I am sharing here is of green chutney premix or green chutney travel mix. I made this chutney mix powder with only coriander leaves but you can add mint if you want to. Generally green chutney is prepared with fresh ingredients but these fresh ingredients may not be available all the time and in every area. For those who live in hostels or in other temporary arrangements instant or premix recipes plays important role. Although this instant green chutney powder is a great way of adding Indian flavors to your food but if you can find fresh ingredients use them, as they will give perfect taste. Make this coriander green chutney premix or homemade chutney premix once and enjoy it for whole year.

  1. Rinse the coriander with clean water and then sperate the leaves of coriander from stem. Do not separate the soft stems from leaves as they will give nice aroma to chutney mix, just remove those stems which are hard.

  2. Let the extra water drain from coriander. The spread it over any kitchen towel and dry it completely. 

  3. Now let the coriander dry completely in sun light or in the shade as per your choice.

  4. Slit and then cut the green chilies, let it dry as well in sun light completely.

  5. In a grinder jar add dried coriander, dried green chilies, citric acid, black salt, salt, dry ginger powder, roasted cumin powder and roasted channa. 

  6. Grind this mixture well. 

  7. Quick and instant green chutney premix is ready. Store in any airtight container or sealed bag and put it in the fridge. Keeping this premix in the fridge will increase its shelf life and you can use it for a year easily.

  9. Take as much chutney premix as required and add water as per required consistency. If you want thick chutney add less water and for thin chutney add more water.

  10. Give a good mix and fresh, flavorful coriander green chutney is ready to enjoy.
