Many of the recipes you make frequently can be divided into premixes that can be stored in multiple quantities for quick and easy cooking. When you want to make your favorite recipe, just combine the stored premix ingredients and finish the recipe quickly. Dosa is a popular South Indian thin crepe made from fermented rice and lentil batter. The history of dosa suggests that initially they were made using only rice but over time people started adding urad dal (black lentil) to give it texture and flavor. Dosa is made by soaking and mixing black gram dal (urad dal) and rice in a batter. The fermented batter then spread over a hot gridle (tawa) like a crepe.
Making dosa at home is a long process, but this instant dosa mix flour is very easy to prepare at home. Whenever you want to make instant dosa, just take the required amount of flour, add little curd (or lemon juice), water, mix well and start making dosa. Dosa or idli or any rice-based recipe is a staple meal for many South Indians. But generally, they are made with different rice and urad dal flour in different quantities and proportions. But it can also be done with a single and balanced ratio and this instant dosa mix recipe is one such balanced breakfast premix where you can try dosa, uttapam, paddu and idli.
I have added baking soda which can be a problem for some people and so it can be replaced with fruit salt (eno). These fermenting agents are necessary to use because we are skipping the natural fermentation process with the instant method. I haven't tried the natural fermentation process for this instant dosa premix, but I'm sure if you leave the batter overnight it should ferment naturally. If you try this, avoid adding baking soda because then it will not be needed.
Finally, in this dosa premix, I have added poha which absorbs water quickly. Therefore, you may need to add more water once the batter is ready and rested for a while. This breakfast mix is time saving and required less efforts that's why its one of the best instant breakfast recipe for single person or hostel persons.
In a frying pan add rice and dry roast on low flame till the moisture from rice is removed completely. Take out and let the rice cool down.
After the rice are completely cooled add these into a grinder (mixi jar) and grind into coarse powder. You may use stor bought rice flour as well. Keep this rice flour aside.
In the frying pan now add urad dal, toor dal, chana dal, methi and dry roast all these over low flame till the moisture is removed.
Then add poha and dry roast it as well on low flame till it turns crisp.
Take the pan off the flame and let the mixture cool down completely.
Then transfer this roasted mixture to the grinder (mixi jar) and grind into a fine and smooth powder.
Transfer this dal powder into the rice flour that we already prepared.
Add rava, salt, baking soda as well, give a good mix to everything.
Instant dosa mix is ready, store in any airtight container.
______________ For Preparing Dosa with Instant Mix ______________
In instant dosa flour add yogurt/curd and water, whisk to combine and prepare a smooth batter without lumps.
Spread the batter on hot tawa for making simple dosa and cook over medium flame.
Spread some oil or butter or ghee as required while cooking dosa.
When the base becomes golden and crisp remove and serve the dosa.
______________ Note: For making onion uttapa with this instant dosa mix spread the dosa batter over hot tawa and spread about 4 tablespoon finely chopped onion on it. Press gently, add oil as required and cook over medium flame. Flip over when the base becomes golden and crisp and cook from the other side too.
For making appe/paddu with this dosa premix add chopped onion and coriander to the batter, add in the hot appe pan, cover it and cook on medium flame till top surface becomes less shiny. flip over and cook from the other side as well.
