In winter season soup holds a prominent position in our cuisine. Manchow is a restaurant style Chinese vegetarian soup made with mixed vegetables, ginger, garlic, soy sauce, pepper and many other ingredients in your pantry. The soup tastes even more delicious when served with crispy noodles. Manchow soup is one of the most loved soups in Indo-Chinese cuisine & today I am sharing recipe of homemade manchow soup with crispy noodles. The serving even enhance the flavors of this soup as it is not with simple daily ingredients but with fried crispy noodles and make you want eat more. You may even make it spicy vegetarian manchow soup by skipping the chicken and chicken broth. If you have enjoyed Hot and Sour Soup you will definitely relish this soup.
Add the red chilies in a wok and dry roast these for few seconds and take out.
Add cooking oil in the pan, then add ginger garlic paste, chopped green chilies and onion in it. Saute these for around 2 minutes.
After this add chopped mushrooms, corns, peas, carrots and cabbage along with already roasted red chilies.
Also add salt and saute these as well. The smokiness of red chilies will take the soup to next level.
Add boiled shredded chicken in the pan now and mix it.
Now add water along with chicken powder, black pepper powder, Soy sauce, hot sauce, ketchup and give a mix to everything.
Cover the pan and let the water boil.
On the other side in 1/2 cup water mix corn flour and combine it well with water to make slurry.
After the boil uncover the pan, add diced capsicum, cook the soup for 1-2 minutes more.
Then gradually add cornflour slurry and stir continuously so that lumps should not be formed. The flame should be slow at this time.
After cooking a minute add a beaten egg in the soup and stir it continuously as well. Cook for 1 minute more.
At the end add chopped green part of onion and and turn off the flame. (if you feel the soup is more thick than your requirement than you can dilute it by adding little more water).

Heat the cooking oil in the wok.
On boiled noodles sprinkle the masala that came along with noodles packet.
Also sprinkle the corn flour and give a good mix to noodles.
Fry the noodles in the heated cooking oil till they turn crispy.
Take out and keep aside.

Take the soup in serving bowl and put the crispy noodles on top.
