Spanish omelette or Spanish tortilla is an easy and perfect to be served hot or cold recipe, perfect for picnics, parties, breakfast. It is an upgraded version of our traditional omelette and a fantastic way of using up all kinds of ingredients you may even add leftover vegetables, crumbled or grated cheese, herbs or even cooked chicken or meat. They all will taste great in this omelette so keep experimenting with it.
The Spanish omelette that i made is by simply using potatoes, onions and eggs combined in a form of omelette. In the tortilla espanola the potatoes are finely sliced and and fry a little bit before adding them in the omelette mixture. Once the potatoes are done they are mixed with the egg mixture and then cooked in the form of omelette. For me this a complete breakfast and I hope you will also love this recipe. Try & enjoy!
In a pan add cooking oil and heat it on medium low flame.
Add finely chopped onions and saute two minutes.
Then add thinly sliced potatoes in it and fry these for 2-3 minutes.
Cover and let the potatoes completely cooked. This will take about 1-2 minutes.
Turn off the flame, take out cooked potatoes and let these cool down completely.
In a bowl add eggs along with salt and pepper. Beat these well.
Now mix the eggs with potatoes and combine well.
Heat a frying pan with cooking oil in it on medium low flame.
Add the omelette mixture in pan, spread evenly with a spatula.
Cover and let it cook on low flame for 6-8 minutes till it cook completely.
After the time put a plate over the pan, flip it so that omelette could easily came out over the plate.
Cover the pan again and let the omelette cook from other side for 6-8 minutes more.
Carefully take it out and serve.
